White Chocolate, Raspberry and Almond Milk Muffins

Hello lovely people, this is my recipe for some delicious muffins, that are extremely tasty and are low in calories compared to normal muffins! It's a super easy recipe so, enjoy the yummy chunks of white chocolate and the explosion from the raspberry's. Beauties, this recipe has almond milk in which is a refreshing substitute to cows milk - it is lower in calories, and provides you with lot's of good' stuff. Enjoy the crisp top to these muffins which is topped with a sprinkling of poppy seeds!

Ingredients. (Makes 12)

400g Self-Raising Flour
200g Golden Sugar
250ml Almond Milk
3 Eggs
100g Raspberry's 
150g White Chocolate 
Small bag Poppy Seeds 
12 Muffin Cases

Gorgeous people, Preheat your oven to 180 degrees (fan), 200 degrees (normal), layer the muffin tin with your cases, and your first step is to crack all 3 eggs into a large mixing bowl...


... with the eggs pour into the bowl 250ml of Almond Milk, whisk together until combined, then add in the 200g of Golden Sugar, and whisk for several minuets until the mixture has slightly thickened...

  
... add the 400g of flour ...


... whisk the flour, until the mixture is smooth ...


... break up the white chocolate into small pieces and throw into the muffin mixture, then throw in the Raspberry's ...


... fold in the white chocolate and raspberry's and carefully by using two spoons, transfer the mixture into the 12 muffin cases, lightly sprinkle the poppy seeds ontop ...


... place in the oven for 30-35 minutes until the tops of the muffins are golden, leave to cool and enjoy the yummy muffins you lovely people.
